India is a very diverse country where some are celebrating Raavan Dahan, end of Navratri and for Bengalis, it is bidding farewell to Goddess Durga for a year. So, whether you are celebrating evil’s destruction or to make yourself happy after the puja is finished, there cannot be anything better than a bowl of kheer or payesh for everyone, right?
If you are not Bengali, try out this Kheer or payesh and surely, you will not regret it, until and unless you prepare it wrong. Not much scope there but here is how to make a perfect bowl of Bengali style Kheer:
Ingredients:
Milk - 1 kg (5 cups)
Sugar/Jaggery (Gur) - 200 g (3/4 cup)
Basmati Rice – 1 palm full of rice
Cashews and raising (Optional)
Rose petals
Method:
1. Wash the rice and let it dry. Wet rice is not at all recommended.
2. Boil the milk.
3. After the milk is boiled, pour the rice into the milk and let it get cooked properly.
4. Keep on stirring as the rice has the tendency to settle at the bottom.
5. When the rice gets boiled and cooked properly, put the sugar/jaggery. If you put the sugar before the rice gets boiled, the process will take a lot of time.
6. Now, put the cashew and raisin.
7. Now, keep on stirring till the milk gets thickened. The more it will thicken, bubbles will appear and it will be ready.
8. Garnish it some rose petals and you are ready to serve.
